I love making stuff. I really do. I am just usually too lazy or too tired. For some reason, though, I’ve been dreaming of making felt soft toys all last week. So, totally by chance, I found some felt last Thursday and bought some. I then went home, googled “felt bunny pattern” and found this PDF. I realized I needed some more felt and different colored thread so I went out and bought the stuff yesterday and made a bunny.

He took 4 hours to make, Lulu likes him but not as much as Woowoo but that’s ok. I still have lots of left over felt so I am looking for a new project . Now excuse me while I go dream about them.

I had some friends over for dinner last night and it was awesome. It was a simple affair; pizza, salads, crackers with cheese and chocolate cheesecake. The cheesecake was the best thing on the menu. I spent hours deciding what to make because I wanted to make something easy but very yummy. I also didn’t want something that might not turn out so well, so after lots of thought I settled on chocolate cheesecake. I looked at a couple of recipes but most of them needed ingredients I didn’t have like drozen whip and things like that. Not being someone who follows recipes exactly as they are, I had to add toffee bits and walnutes to give it some crunch. It was a hit, and my crowd is a tough one, cheesecake is a favorite but it is usually regular cheesecake with strawberry or berry topping.
Chocolate Oreo Base
- 32 Oreros
- 1 stick of butter
You can’t have chocolate cheesecake without a chocolate base. I used Oreos but you can make a regular base using Digestive biscuits if you like and add some cocoa powder. Crush them and add the melted butter and press into a spring form pan. You can crush them in a food processor or just put them all in a plastic bag and smash them with a rolling pin or something. I like using a food processor because washing it is less work than smashing them, I am lazy like that, plus you get a more uniform texture. I used an 8 inch pan because honestly, that’s the only one I own, but I think a 9 inch pan would have worked better. Press the mixture up against the sides as well because it looks much cooler that way. You can always use less cookies and butter for a thinner base. Put it in the refrigerator until it is nice and firm. I left it for 4 hours, because I had to go do some shopping, but from experience, the longer you leave it the better.
Filling
- 2 packages of 8 oz Philadelphia cream cheese
- 1/4 cup granulates sugar
- 3/4 cup brown sugar
- 2 tablespoons on milk
- 1 teaspoon vanilla
- 8 oz of chocolate
- Walnuts
- Toffee
Beat the cream cheese, sugar, milk and vanilla until the sugar has been disolved into the mixture and it’s nice and fluffy. I have a small hand mixer which is not really made for this kind of thing, but I make it do the job, a stand mixer would be awesome, actually a lovely cool pink Kitchen Aid mixer would be a dream, but I will keep on dreaming, I don’t have the space to store it and they’re quite expensive.
Melt the chocolate in the microwave or on a double burner. I just put it in the microwave on high for 40 seconds, gave it a stir and it was perfect.
Add the chocolate to the mix, just wait a few minutes for the chocolate to cool first. Once it’s all mixed, drop in the walnuts and toffee. I just chopped them roughly. I also got 2 packages of chewy toffees, the kind that have 6 or seven bits in them and quartered them so they would be small. You could also use a Mars bar or anything else you like actually. Fold everything in evenly and spoon into the pan over the base. It should be nice and thick and even out the top. Decorate it with the remaining toffee or eat it, do whatever you like, but I like a good looking cheesecake, because I think it it doesn’t look good I won’t eat it. Pop it into the fridge. Now you can lick the spoon and the bowl if you like, yes, I lick the stuff, isn’t that why we make stuff in the first place?
Invite friends over, because good things are meant to be shared. You could of course eat it all yourself, but don’t blame me if you get high on the sugar and go running around like a crazy monkey, but if you do, please ask someone to take pictures and post them on facebook.

After writing the last post about things you need in the kitchen, I started thinking about ingredients which I always keep in my pantry and fridge so that I can make a meal.
- Flour. Flour is amazing and wonderful. Really it is. Need to thicken soup? Bake cookies? Make pizza? Bake a cake? Make pie?
- Frozen Veggies. Fresh vegetables and greens are great but they spoil quickly and we’re trying to eat more healthy foods so I buy the frozen veggies and keep them in the freezer all the time. I add them to rice, meat and even make them on their own. I also oven bake fries for a quick snack or instead of regular carbs like rice and pasta. The secret is to bake them at low temperatures and on the middle rack in the oven so they crisp evenly without burning, just as yummy as deep fried ones but much less fat.
- Eggs. Need to make a quick meal? Don’t have time? Make an omelet, add some diced tomatoes, onions, bell peppers, mushroom, whatever you like and presto, everyone is happy and full.
- Canned Beans. Red Kidney Beans are my favorite. Another great healthy protein powered meal in a jiffy. Throw in some bell peppers, add spices and some tomato paste and you’ve got a colorful, tasty and satisfying meal in minutes.
- Cocoa. It’s cold, make some hot chocolate or make brownies. I like to make sure my guests have something to eat when they come over for tea or coffee so I keep cocoa so I can whip something up.
- Spices. I absolutely love spices; cinnamon, ginger, black pepper, cayenne pepper, curry, everything goes. They add so much to food.
- Fresh and dried Herbs. Fresh herbs are great but you need to use them quickly so dried ones work almost as well in most dishes. Thyme, basil and mint are the basic three.
- Tomato Paste. Yes, fresh tomatoes are better but again this way I can always have some stored.
- Garlic in a jar. Do you really think I am going to buy fresh garlic and crush it?
- Olive Oil. Great in salads and most middle eastern dishes. I love Extra Virgin olive oil, the aroma and the taste.
There are of course so many other ingredients that rarely go missing in our home like milk, yeast, yogurt, rice, pasta, sugar, salt and pepper but basically if you want to make homecooked meals you need to be prepared. We used to eat out a lot and order in too but now we just go out and have a nice meal every week or two and cook everything else at home. We feel great and are definitely healthier. We try to buy fresh fruit as much as we can too because Lil Miss Bite Mommy likes bananas, apples and pears and we try to expose her to as much fruit and veggies as her little hands can hold and chew.

When I first got married and moved to Kuwait I had to buy all of my kitchen things all at once. We were short on time, money and space so we got the things that were absolutely necessary. Looking back I think we were spot on, you really don’t need many things but some tools are essential. This is the list of most important things you really do need.
- A good set of knives. You only need 3 good knives (small, medium and large). Invest in good knives because bad knives will just make you want to kill yourself. Look for the kind with the serrated edge because they don’t need sharpening and can handle tough things like meat and difficult things like not so fresh tomatoes.
- A cutting board. Personally I like the wood ones, they look nicer and don’t keep bacteria like the plastic ones. I’ve marked each side by either “meat” or “veggies” so I never cut on the wrong side. It is healthier that way.
- Kitchen Processor. You don’t need one of those huge ones and you don’t need a blender, juicer, etc. All you really need is one of those hand held ones with the different attachments. In the beginning I chose it because they were smaller and cheaper. Over time I have realized that it was a great choice because you can use it to make everything from cake batter, baby food, soup to knead dough.
- Aluminum Foil, Plastic Wrap and Resealable bags. These are probably the most important things you need. I don’t own baking sheets or a pizza dish but I have made pizza and cookies on the oven tray with two sheets of foil. I also bake french fries in the oven this way too. Plastic wrap keeps food fresh and is great for making sure things don’t smell in your fridge. Resealable bags are probably the most underrated invention in recent history. I have used them to keep herbs, spices, vegetables, baby food, meat, you name it stored.
- Pots. You really only need 3 (small, medium and large) I am sure I could live with less but if you ever have guests like in Ramadan 3 is not nearly enough.
- Ovenware. I have glass and clay dishes, these are great from casseroles to cake they can be used to make many and different dishes. You also need less fat so it makes healthy cooking easier.
- Glass Boxes. I hate plastic boxes, I think my mom is the reason. She would always say the plastic ones were a great home for bacteria and other ills. They are more expensive than plastic but are easier to clean, healthier and don’t hold smells much.
- Sponges. The cheap ones are not worth it, you really don’t want to scrub forever, just buy the more expensive well known brands like Vielda or ScotchBrite. Remember to zap them in the microwave every once in a while to keep them clean.
- Frying Pan. You know the ones with the red dot in the middle that goes really red when it’s time to start cooking. You only need a small one, and you can make fried eggs with no oil or grill sandwiches and other things with really little or no fat at all. Invest in one even if it is a bit more expensive than the regular ones because it really is worth it.
- CD Pen. Kinda geeky, but really useful when you want to label plastic bags which are going to go in the freezer or spice jars so you don’t have to open and sniff until you sneeze. It really is a smart idea to write down what things are in case you might forget (it has happened) or when you made something so you have an idea of it’s expiry date.
There are other things you might want to consider but are not really necessary but can make your life easier.
- Hand soap dispenser. My husband thought it was weird that I had a liquid soap dispenser by the sink but now thinks it is super smart. When I was pregnant I was obsessessed with washing my hands after touching raw meat and poultry and this was just the easiest and best way to do it. Understanding kitchen hygiene is a must for anyone who cooks, it keeps yourself and your family healthy and safe.
- Kitchen Paper Towels. These are great for draining fried food on and cleaning spills and messes which you might not necessarily want to clean with your cloth towels.
- Muffin Tin. Not a must but nice to have.
- Rolling Pin. I don’t have one, I just use glasses or jars. I keep forgetting to buy one.
- Meat Pounder. I guess you could use a book but it is good to have one.
- An apron. I must get me an apron.
- Measuring cups and spoons. You can use regular cups but really measuring accurately makes the world of a difference in baking.
- Spatula. Yes you can use a normal spoon but again this is a cheap utensil that makes your life so much more easier.
- Kitchen Scale. I don’t have one but I think it might be a good idea to have one.

 Yummy Chocolate Cake
I wanted to make desert today but had run out of butter so that ruled out cookies and brownies. I found this recipe but slightly modified it as usual. It is very easy and turned out really nicely
Cake
- 1 1/2 cups flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoons baking soda
- 1/3 cup cocoa
- 1 teaspoon vanilla essence
- 1/3 cup cooking oil
- 1 cup water
Mix all the dry ingredients really well. Add the liquid ingredients and mix with a fork. Pre heat the oven to 180 degrees Celsius. Put batter in a pan and bake for 35 to 45 minutes until the fork comes out clean.
Icing
- 4 chocolate squares
- 3 Tbsp Milk
- 2 Tbsp Oil
- 2 Tbsp Icing sugar
Melt the chocolate, blend all ingredients together. Cover the cake with the icing.

I wasn’t in the mood for making real food yesterday so I decided to make Pizza for dinner. I found this really easy pizza dough recipe. It turned out perfect, not too thick, not too doughy and not too crispy. The only modification I made was that I added some dried basil to the dough. I made easy sauce by mixing 2 tablespoons of tomato paste, 1/2 a teaspoon of garlic paste, a teaspoon of extra virgin olive oil for flavor and some dried basil. I went to buy a pizza dish but thought they were on the expensive side so I just made the pizza on the oven’s tray with 2 sheets of aluminum foil underneath. I also didn’t have a roller pin so I just used a jar instead to roll out the dough. A layer of peperoni, olives and mozarella cheese and in it went in the oven and turned out great. For desert we had brownies, I thought we were going to have guests but plans changed so they were all ours. Then interesting thing is when I bake I don’t really binge on them probably because I know how much sugar and butter went into them so I can almost see calorie balloons written on them. I aso don’t have a baking pan either so I just made them in the pyrex dish, it takes a couple of more minutes than a metal pan but still turned out chewy and dark.

It took us almost a year before we really felt that our appartment was complete. Some items are more important than others and some are the real cherry on the cake.
- Comfortable sofa. We spend so much time in the living room so the sofa is a huge focal point of our home. It was also our first purchase, we wanted something comfortable, good looking and didn’t show stains easily.
- Oil Burner. I got a really pretty one from the BodyShop and a really relaxing and refreshing scent and the long burning tealight candles. The sales lady said that the candles burned much longer than the regular and much cheaper ones. At first I thought she was being “salesy” but I decided to try them anyways and yes they do burn for 3 or 4 hours which is more than double the time the regular ones do.
- Great Mugs. I love mugs, big mugs, colorful mugs, funky mugs and mugs with a message. They make my morning coffee enjoyable. Whenever I started a new job I always bought a new mug, it makes the new place feel a little bit more personal and friendly.

- A great Mattress and great bedsheets. This goes without saying but a really good mattress makes the world of a difference. A good nights sleep is the first step to happiness and good health. As for bedsheets, Egyptian Cotton is the best. The higher the threadcount the better, it makes the sheets so much softer.
- Storage space. Clutter depresses me, I like things to have a place. Everything should have it’s home. I still have lots of things lying around especially little cows and frogs that go “Moo” and “Ribbit” and Jingle when you step on them ( they have a lovely home in a bright pink box, but my daughter is so attached to them that they follow her around all day ). Boxes are great, magazine holders, under bed boxes, closet organizers take your pick.
- Good lighting. Even the best furnished house in bad lighting looks bad. Indirect lighting adds ambience, overhead lights are great when you need a bright environment, lamps with pretty lampshades are not only good for lights but also for decor. I have these ice cube lights from IKEA and they are just super, they give off this warm light that makes the place feel so cozy.

- Positive energy. Again if you act positive inside your home the good positive karma will bite you. If you are sad, depressed and mope around all day then no matter how expensive your coffee table your home will be a dark and gloomy place. Maybe Feng Shui is your way or maybe you are into environmental psychology but whatever you choose, a positive attitude is healthy. My personal motto, is open spaces, good flow and lots of sunshine.
- Personal touches. I love flowers and nature in general, that’s why we have large prints on the wall with flowers and forests. My husband loves fiery colors, so we have an orange carpet. If the home does not reflect your own personal style it will never really feel yours will it?
