Food Inc. : Not for the squeamish

I watched the documentary Food Inc and was this close to turning into a vegetarian.   I am not a “meat” person, I am not in love with burgers although I will get a burger craving every once in a while but this documentary made me decide never to eat a fast food burger or any kind of meat of unknown origin again.

I never really thought about where the meat came from, because ground beef comes from cows right.  In my imagination it came from one happy cow that munched on green grass somewhere with blue skies and maybe a fresh water stream in the background.

Wrong!  It come from cows in these extremely highly packed feeding areas and one burger can come from literally thousands of cows.  There was a part about a mom turned food activist because her 5 year old son ate a burger and contracted E.Coli then passed away 12 days later.  That wasn’t what scared me the most.  It was the bit where she described how his kidneys had failed and he would beg for water.  I am not a particularly healthy eater  ( I’d be very happy to live on pizza, brownies and diet pepsi if I could get away with it)  but this isn’t about healthy eating or not.  This is about the fact that even the food that you might assume to be healthy or hygenic could be the exact opposite.

How about fruits and vegetables.  Do you have any idea what has been done to them to make them season less?  No wonder everything tastes like cucumbers and cucumbers taste like cardboard.  A couple of weeks ago my husband bought some kiwis.  I love kiwis,  but they tasted like pipes.  They were so metallic in their taste that we forced ourselves to eat them.

Any way, this started the search for the best homemade burger recipe.  We made burgers twice (from beef, ground before my eyes from a trusted butcher), they were good but not perfect yet.  It took us over six months (26 thursdays) to get our pizza the way we wanted,  so we are not in a hurry.

I just realized that it takes the same amount of time to make burgers that it takes to order them, although if you order them you get to sit on your butt for 30 minutes and don’t have to wash any dishes.

Or the chicken, eeeewwwwwww.  I am not eating chicken unless it is free range.  Gross how they have re engineered chicken.

One of the other interesting facts was how the food industry has always fought labeling.

This is a movie that you really should see.  Just make sure you are not eating dinner (or have plans to).

6 People Worthy of the Nobel Peace Prize

The Nobel Peace prize is awarded to those who have helped keep the world a more peaceful place.  However there are people out there who have invented things that help keep world peace today and go unnoticed.  I would like to thank these people for making my life more peaceful.

Amazing family and friends

When you are really upset that you want to slit someone’s throat, they stop you.  When you are angry and want to commit suicide they give you the perfect pep talk.  When you are sad and depressed they hold your hand.  Having good people around you keeps the world a better place.  Think of Hitler, I am sure he didn’t have good people around him to guide him.

To the good people in my life, thank you!

Twitter and Blogging

Strange to say that Twitter or blogging help keep world peace, right?  Wrong!  Think of all of the angry people blogging, ranting or just telling the world what they are doing.  Imagine if all of these people had to bottle up all of their negative, angry and negative feelings, they would all burst or perhaps commit murder.  I must admit that some blogs though make you feel angry and negative but you learn to just close the tab and never visit the blog again if you are a normal person with no aggressive tendencies.  Twitter on the other hand helps people unload their feelings in 140 characters immediately which helps unload your pent up anger.  The old fashioned way is writing in  a diary, which also I would guess has helped many people feel better.  I kept thinking if Facebook is worthy of a mention here or not but decided against it.  Facebook helps the lonely people like me feel as if there is still a world out there full of people who actually do stuff but it also sometimes makes me angry and just in a plain bad mood so, no, sorry facebook you don’t deserve a Nobel.  So to the inventors of Twitter and blogging, thank you.

TV

Yes, TV is a peace device.  Imagine all of those bored married couples without a TV in their home.  They would actually have to talk!  They would probably end up at each others’ throats every day.  All of those channels to surf, all of that bad programming to sift through and all of the mind numbing shows to kill your brain cells and prevent you from waging a war.  TV inventor, thank you!  Oh, I almost forgot, YouTube people, thank you for all of the funny videos of cats stuck in a box of Kleenex!

Comfort Food

If every time you felt bad you had a fight with someone instead of just eating something you would be really thin but there would be many causalities besides your waistline.  To the people who have come up with fries, chocolate bars and ice cream of the world, thank you!

Coffee

Yes, coffee not money makes the world go round.  Coffee helps mothers around the world wake up and make the lives of the rest of the family work.  It helps your brain work when it is humanly impossible for it to tick.  It sometimes make the lack of sleep headaches go away at least for a short while to function and not kill people.  Not all coffee is equal though.  There is freshly ground coffee that has an aroma from heaven that fills the house and makes you walk on air.  Yes, I have actually experienced euphoria inducing coffee.  My happiest memories are with friends and family sharing the perfect cup of coffee, sometimes even the coffee was just horrible but the company was so awesome that coffee always makes me happy.  I confess, coffee makes me happier than chocolate.

To all of you perfect coffee beans out there, thank you!

To the person who realized that we can drink the stuff, thank you!

Headache Medication

If you have ever had a splitting headache or migraine then you knows exactly what I mean.  Your head is throbbing, your forehead feels like there is a construction site working on it and your eyes just want to pop out.  You pop a pill, two or three depending on how dependent on the stuff you are and in a little while the world is a nicer place again.  Some of us have it worse than others like myself who suffer chronic migraines which sometimes are vomit inducing and no amount of pills can make the migraines go away but at least when the pills work I feel like a human being.

To the person who discovered the formula, thank you!

10 Ingredients you should always have in the kitchen

kitchenAfter writing the last post about things you need in the kitchen, I started thinking about ingredients which I always keep in my pantry and fridge so that I can make a meal.

  1. Flour.  Flour is amazing and wonderful.  Really it is.  Need to thicken soup?  Bake cookies?  Make pizza?  Bake a cake?  Make pie?
  2. Frozen Veggies.  Fresh vegetables and greens are great but they spoil quickly and we’re trying to eat more healthy foods so I buy the frozen veggies and keep them in the freezer all the time.  I add them to rice, meat and even make them on their own.  I also oven bake fries for a quick snack or instead of regular carbs like rice and pasta.  The secret is to bake them at low temperatures and on the middle rack in the oven so they crisp evenly without burning, just as yummy as deep fried ones but much less fat.
  3. Eggs.  Need to make a quick meal?  Don’t have time?   Make an omelet, add some diced tomatoes, onions, bell peppers, mushroom, whatever you like and presto, everyone is happy and full.
  4. Canned Beans. Red Kidney Beans are my favorite.  Another great healthy protein powered meal in a jiffy.  Throw in some bell peppers, add spices and some tomato paste and you’ve got a colorful, tasty and satisfying meal in minutes.
  5. Cocoa.  It’s cold, make some hot chocolate or make brownies.  I like to make sure my guests have something to eat when they come over for tea or coffee so I keep cocoa so I can whip something up.
  6. Spices.  I absolutely love spices;  cinnamon, ginger, black pepper, cayenne pepper, curry, everything goes.  They add so much to food.
  7. Fresh and dried Herbs.  Fresh herbs are great but you need to use them quickly so dried ones work almost as well in most dishes.  Thyme, basil and mint are the basic three.
  8. Tomato Paste.  Yes, fresh tomatoes are better but again this way I can always have some stored.
  9. Garlic in a jar.  Do you really think I am going to buy fresh garlic and crush it?
  10. Olive Oil.  Great in salads and most middle eastern dishes.  I love Extra Virgin olive oil, the aroma and the taste.

There are of course so many other ingredients that rarely go missing in our home like milk,  yeast, yogurt, rice, pasta, sugar, salt and pepper but basically if you want to make homecooked meals you need to be prepared.  We used to eat out a lot and order in too but now we just go out and have a nice meal every week or two and cook everything else at home.  We feel great and are definitely healthier.  We try to buy fresh fruit as much as we can too because Lil Miss Bite Mommy likes bananas, apples and pears and we try to expose her to as much fruit and veggies as her little hands can hold and chew.

Pizza and brownies

I wasn’t in the mood for making real food yesterday so I decided to make Pizza for dinner.  I found this really easy pizza dough recipe.  It turned out perfect, not too thick, not too doughy and not too crispy.  The only modification I made was that I added some dried basil to the dough.  I made easy sauce by mixing 2 tablespoons of tomato paste, 1/2 a teaspoon of garlic paste, a teaspoon of extra virgin olive oil for flavor and some dried basil.  I went to buy a pizza dish but thought they were on the expensive side so I just made the pizza on the oven’s tray with 2 sheets of aluminum foil underneath.  I also didn’t have a roller pin so I just used a jar instead to roll out the dough.  A layer of peperoni, olives and mozarella cheese and in it went in the oven and turned out great.  For desert we had brownies,  I thought we were going to have guests but plans changed so they were all ours.  Then interesting thing is when I bake I don’t really binge on them probably because I know how much sugar and butter went into them so I can almost see calorie balloons written on them.  I aso don’t have a baking pan either so I just made them in the pyrex dish, it takes a couple of more minutes than a metal pan but still turned out chewy and dark.
